You will need:
The following Ingredients:
- 2 slices of sourdough bread
- 4 large egg whites
- 1/4 cup unsweetened almond milk (or any milk of your choice)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- A pinch of salt
- Cooking spray or a small amount of olive oil for the pan
- 1/2 cup fat-free cottage cheese or Greek yogurt
- 1/2 cup fresh blueberries
- Optional: a drizzle of honey or maple syrup for sweetness
Instructions:
Prepare the Egg Mixture:
- In a shallow bowl or pie dish, whisk together the egg whites, almond milk, vanilla extract, cinnamon, and a pinch of salt until well combined.
Soak the Bread:
- Dip each slice of sourdough bread into the egg white mixture, allowing it to soak for about 20-30 seconds on each side. Ensure the bread is well-coated but not overly saturated.
Cook the French Toast:
- Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or a small amount of olive oil.
- Place the soaked bread slices onto the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
Assemble and Serve:
- Once the French toast is cooked, transfer it to a plate.
- Top each slice with a tablespoon of fat-free cottage cheese or fat free yogurt.
- Scatter fresh blueberries over the top.
- If desired, drizzle a small amount of honey or maple syrup over the French toast for added sweetness.
