MOCHA PUDDING

You will need:


The following Ingredients:

- 1/4 cup chia seeds

- 1 cup unsweetened almond milk

- 1 tablespoon unsweetened cacao powder

- 1 tablespoon instant coffee or 1/4 cup brewed coffee (cooled)

- 1-2 tablespoons maple syrup or honey (adjust to taste)

- 1/2 teaspoon vanilla extract

- A pinch of salt

- 1/2 cup fat-free yogurt

- Additional cacao powder for sprinkling on top


Instructions:


1. Prepare the Chia Pudding:

   - In a medium-sized bowl or a jar with a lid, combine the chia seeds, almond milk, cacao powder, instant coffee (or cooled brewed coffee), maple syrup or honey, vanilla extract, and a pinch of salt.

   - Whisk the mixture thoroughly to ensure the cacao powder and coffee are well incorporated and there are no lumps.

   - Let the mixture sit for about 5 minutes, then give it another good stir to prevent the chia seeds from clumping together.


2. Refrigerate Overnight:

   - Cover the bowl or jar and place it in the refrigerator. Allow the chia pudding to soak and thicken overnight, or for at least 4 hours.


3. Assemble the Pudding:

   - Once the chia pudding has set and thickened, give it a good stir.

If it's too thick for your liking, you can add a little more almond milk to reach your desired consistency.

   - Divide the chia pudding into serving jars.


4. Add the Yogurt Layer:

   - Top each serving with a generous layer of fat-free yogurt.


5. Finish with a Sprinkle of Cacao:

   - Lightly sprinkle some additional cacao powder on top of the yogurt for a finishing touch.
