TUNA SALAD

You will need:
The following Ingredients:
- 1 cup cooked brown rice, cooled
- 2 cans (5 oz each) tuna in water, drained
- 1/4 cup reduced-oil mayonnaise
- 1/2 small red onion, finely chopped
- 1 cup cherry or large tomatoes, diced
- 1/2 cucumber, diced
- 1/4 cup crumbled feta cheese
- 1 ripe avocado, diced
- 1/4 cup peppadews, chopped
- Salt and freshly ground black pepper, to taste
- Juice of 1 lemon
-handful olives (optional)
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
1. Prepare the Dressing:
- In a small bowl, mix together the reduced-oil mayonnaise, lemon juice, salt, and pepper. Adjust seasoning to taste.
2. Combine Ingredients:
- In a large mixing bowl, combine the drained tuna, cooked brown rice, red onion, tomatoes, cucumber, feta cheese, avocado, and peppadews.
3. Mix the Salad:
- Pour the dressing over the tuna and vegetable mixture. Gently toss everything together until well combined and evenly coated with the dressing.
4. Adjust Seasoning:
- Taste the salad and adjust the seasoning with more salt, pepper, or lemon juice if needed.
5. Garnish and Serve: (optional)
- Sprinkle the chopped parsley and olives over the salad for a fresh touch. Serve immediately or refrigerate for up to a few hours to let the flavors meld.
