MEXI BOWL





You will need:


The following Ingredients:

For the Bowl:

- 1/2 cup cooked brown rice

- 1/4 cup black beans, rinsed and drained

- 1/4 cup corn

- 1/4 cup diced tomatoes

- 1/4 cup shredded lettuce

- 1/4 avocado, sliced

- 1/4 cup cooked lean mince (or soy mince alternative)

- 1 tbsp chopped red onion

- 1 tbsp chopped cilantro

- Lime wedge for garnish


For the Seasoning:

- 1/2 tsp chili powder

- 1/4 tsp cumin

- 1/4 tsp paprika

- Salt and pepper to taste


Instructions:


1. Cook the Mince:

   - In a skillet, cook the mince over medium heat until browned. Drain excess fat.

   - Add chili powder, cumin, paprika, salt, and pepper. Stir to combine and cook for another 2-3 minutes.


2. Prepare the Bowl:

   - In a serving bowl, layer the cooked brown rice, black beans, corn, diced tomatoes, and shredded lettuce.

   - Add the seasoned mince on top.

   - Arrange avocado slices on the side.


3. Top and Serve:

   - Sprinkle chopped red onion and cilantro over the bowl.

   - Serve with a lime wedge on the side for extra flavor.
